Ham, pepper and olive mini-pizzas
Split English muffins make a great crust for "mini" pizzas. These yummy pizzas taste especially good with a crisp salad on the side.

½ clove garlic—minced (crushed)
4 tablespoons chopped canned tomatoes
1 tablespoon tomato paste
½ teaspoon sea salt
¼ teaspoon freshly ground black pepper
1 teaspoon extra virgin olive oil
3 English muffins (regular or whole grain)—split in half
2 ham slices—chopped into small pieces
1/3 red pepper (capsicum)—diced
1/3 green pepper—diced
8 pitted black olives—thinly sliced
2½ oz (75g) mozzarella cheese—cut into small cubes


PREHEAT the oven to 230°C/450°F. MIX together the garlic, tomatoes, tomato paste, olive oil, salt and pepper. SPREAD a thin layer evenly over each muffin half. ARRANGE the ham, peppers and olives evenly over each muffin half. PLACE the cubed cheese evenly on top. PLACE the pizzas on a baking tray and bake for 10 minutes.



  Pizza Supremo. Pizza topped with red onion, red and green pepper, mushrooms, sliced sausage, anchovies, black olives and mozzarella cheese.


  Sicilian Tuna and Basil Pizza. Pizza topped with a rich tomato sauce, tuna, fresh basil, green pepper and mozzarella cheese.
