Fish sauce

Fish sauce (known as nuoc mam in Vietnam and nam pla in Thailand) is a pungent and salty mix of fermented fish (typically anchovies), salt and water. It's used extensively in Thai and Vietnamese cooking as a seasoning in curries, stir-fries, fried rice, soups, marinades and sauces.
