Asian-style fruit salad
Serves 4
This exotic salad of fresh and
canned fruits provides the perfect ending to any Asian meal (or any
meal for that matter).
2 kiwi fruit—peeled and thinly
sliced
2 mangoes—peeled, seeds removed and flesh cut into cubes
2 mandarins—peeled and divided into segments
1 cup drained canned lychees
1 cup drained canned pineapple pieces
COMBINE all fruits in a bowl and toss
gently to mix. SERVE with a scoop of ice cream, fresh or frozen
yogurt, or sorbet.
Variations: A variety of tropical
fruits, including bananas, watermelon, honeydew melon, papaya,
cantaloupe, nashi fruit (Asian pear), guavas and passionfruit can be
used in this Asian-inspired fruit salad.
