Mixed melon salad with ginger syrup
serves 4
Fruit salad made with two types of
melon and drizzled with a sweet and tangy ginger syrup.
1 cup water
1-inch knob of fresh ginger — peeled and crushed with the side of a
large knife blade, keeping it in one piece
3 tablespoons superfine (caster) sugar
1 honeydew melon
½ watermelon
PLACE the water, ginger and sugar in a
small saucepan and bring to the boil. BOIL, uncovered, until the
liquid has reduced by about half and turns syrupy. REMOVE the ginger
and let the syrup cool before use. REMOVE the seeds from the melons
and scoop out the flesh with a melon-baller. MIX together the melon
balls with the ginger syrup in a bowl.
